As the seasons change, it’s great to indulge in warm, hearty soups – they’re even better when they’re homemade! This recipe is our family’s favourite butternut squash soup and very simple to whip-up.
These days, as a family we seem to be eating less and less meat. So it’s important to find a meal that will be hearty enough to satisfy us. And with fall here, I need something soothing and yummy. A couple of years ago I found a perfect recipe for butternut squash soup by Kathy Maister. She has a fantastic site: http://www.startcooking.com/ and I have been watching her cooking videos since I found her. They are also really easy to follow if you have young aspiring chefs in the family.
Our Family’s Favourite Butternut Squash Soup Recipe
I made a couple of adjustments to fit my family’s taste buds. But the great thing about this soup recipe is that you can add other root veggies to it (whatever you have in the fridge at the time) and it will still taste great! Tonight this was the recipe:
- 1 butternut squash, peeled and diced
- 1 sweet potato
- 1 cup of pumpkin puree (my secret ingredient in many things)
- 5 tablespoons of butter
- 1 onion
- 1/4 teaspoon cinnamon
- 1/4 teaspoon ginger
- 3 cups chicken stock (low sodium)
- 1 cup vegetable stock (low sodium)
- salt and pepper for seasoning
*Note: Since this post was done, I have switched to Pacific or Imagine vegetable broth, but Campbell’s no salt broth is also good.
Kathy Masiter’s instructional videos are really fun to watch! I love the filming of her recipes. You’re family will love this soup – my kids gobble it up and ask for seconds. Add a slice of bread and that’s a great fall meal. Enjoy!

Never thought of adding pumpkin purée….must try, thanks for the recipe. Just love squash soup!
It hides itself in the flavour of everything else and gives loads more vitamins 🙂
I honestly didn’t grow up eating squash but love it now and so do the boys.
